How about some baked stuffed avocados?

Recipe

1 onion
1/2 oz. butter
2 large ripe avocado pears, halved and stones removed
4 oz. chopped Brazil nuts (or almonds)
4 oz. Gruyere cheese, diced
4 Tbsp grated Parmesan
2 Tbsp chopped parsley
2 Tbsp sherry
salt and pepper to taste

Preheat oven to 400F. Fry the onion in the butter for 10 min.
Meanwhile, scoop the fresh out of the avocado skins with a tsp,
taking care not to damage the skins. Dice the avocado flesh. Add
the fried onion to the avocado, together with the chopped nuts,
cheeses, parsley and sherry. Season to taste with salt and pepper.
Pile the mixture back into the avocado shells, place them in a
shallow ovenproof dish and bake for 10-15 minutes (keep an eye on
them). Serve immediately.

Linnea- You are wasting a perfectly good Bar-be, afternoon and heating up the condo. Just put the avocado's in foil and toss them on Mary Lou's grill. While you are at it, Make some VEGGI PACKETS! Slice Potatoes, carrots, celery, broccoli, green pepper (Like you use for stir-fry)mix up, put a handful in the middle of a piece of foil. Add 1tsp olive oil, salt&pepper, and a several shakes of Italian dressing. Wrap up foil sealing along the top and ends, double wrap foil putting top seam on bottom(don't want dressing to leak). Toss on bar-be(on the side out of direct heat)for 15-20min minutes, turning over every 5 min or so. YUM,YUM !
