One of my favorites:
Lime Dressing:

* 1/4 cup lime juice
* 1/4 cup Extra Virgin Olive Oil
* 1 teaspoon salt
* 1/2 teaspoon coarse black pepper
* 1/8 teaspoon cayenne
* 1 clove garlic minced

Salad

* 2 medium avocados diced
* 1 can black beans drained
* 1/2 cup diced sweet red pepper
* 1/2 cup diced red onion
* 1 jalapeno diced
* 1/2 teaspoon lime zest
* 1 cup grape tomatoes (optional)
* 1/4 cup cilantro chopped

Methods/steps

Combine all ingredients for dressing in a jar. Tighten the lid a shake until blended.

In a medium bowl add avocado, beans, red pepper, onion, jalapeno, tomato (if desired) and lime zest.
*
Give the dressing another shake and add to the salad. Top with cilantro.
*
Refrigerate until ready to serve.

ok I made this today and am trying it out tonight:) it smells wonderful.. have to remember to put the cilantro on it before serving :) or heck i will do it now.... review to come :)

Very Yummy....

don't know what I did but it isn't very pretty.
:( I used avocados that were still firm but just gave a little to the touch. but still it came out kinda mushy.... I tried to be careful when blending together.. I would definitely make this again for family not sure I would make it for company cause it is a bit "blended" I guess the word is..... and although I know this can stand alone as a veggie dinner or lunch.. we had it with fried flounder and it was really very yummy../ thanks Elizabeth :) George just came in and said Boy this is really good :) SOOOOOOOOOOO

++ two pluses :)

Glad you liked it. I understand about the appearance, sometimes I make it and it looks pretty good and sometimes it looks not so good. I always tastes great though.
