This year we need all the luck and money we can get, so along with the ham for health there will be lots of greens for money and peas for luck:

Collard greens: Pull the green leaf parts off the nasty wooden stems and throw those stems away -- you nee MONEY, not GAS! Put at least 7 collard leaves in a large pot of cold water with 1Tbsp salt, 3 bay leaves, and 5 peppercorns. Bring to a boil and then simmer for 20-30 minutes. They are improved if you also add 7oz of bacon, or salt pork if you are lucky enough to find it in the store.

Black eyed peas (a la New England.....) Wash 1 bag dried black eyed peas and soak for several hours. If you have fresh or canned no need for soaking, but do rinse. Put peas in a heavy oven proof pan or dutch oven, add 8oz (245 grammes) salt pork, fat back, or thick bacon, 2tsp baking soda, cover with water. Bring to a boil, reduce to simmer, and cook one hour. Add water as needed to keep beans just covered. After 1 hour add 3Tbsp. brown sugar, 1 Tbsp salt, 1 tsp. dried mustard (Colemans) OR 1 Tbs dijon type mustard if you have no dry mustard on hand, 1 tsp ground black pepper. Stir all together, top off with water so beans are covered with liquid, cover tightly and bake at 325 for 2 hours -- can be in same oven as your ham, if they will fit :-)
