Ingredients:

1.5 cups olive oil (for frying)
6 oz thick cut bacon, or pancetta, or lardons
4 cloves crushed garlic
1T fresh sage or 1t dried
6 boneless skinless chicken breasts
4oz grated or shredded provolone -- older the better
1 cup (225 grams) flour
4 egg whites
4 cups toasted breadcrumbs, plain or Italian as you prefer

Directions:

Cut bacon into small diced pieces, and brown over medium heat, remove excess grease, add garlic and cook till wilted -- about 1 minute. Transfer to bowl and add sage and cheese.

Cut open a deep pocket in each breast, I find it is easiest to go in from the thick rounded end. Stuff each breast with between 2-4 T of cheese mix, depending on their size. Put flat in freezer while you prep coating.

Put flour into a soup plate and add salt and pepper to taste. Put bread crumbs into second soup plate, egg whites into a third. Lightly beat the egg whites with a whisk.

Get chicken out of freezer, dredge in flour, dip in egg whites, and dredge in breadcrumbs to make a nice thick coating. Set coated chicken breasts on wire racks for about 10-15 minutes to settle the coating, as you would for fried chicken.

Fry chicken in batches in the olive oil, about 5 minutes over high heat on one side, turn over reduce heat, and cook about 7-10 minutes more depending on size, till done.


Tip: make extra - they're great warmed up on rolls for sandwiches too! :-)

Glad folks liked the recipe.

Elvira - We like rice (risotto if you have time), ratatouille or another zucchini and tomato type dish with this. Also good with a big ceasar salad.

OMG you use OLIVE OIL to fry your chicken??? I will pretend I didn't just read that ! lol ! CRISCO BABY, ALL THE WAY. The lard kind, not the liquid. MMMMMM. We like our food fattening down here in these parts. lol !!
