Long time lurker, not too often poster.
AFter the early post on this new restaurant, I was anxious to see what it might be like, so my wife and I tried it tonight. Previously this week, we tried Donna and Georgio, Capriccio, Mona Lisa, Bistro de Paris, and many others over the years. My favorite has always been Capriccio, and my wife leans between it and D and G.

Parked out front for our reservation for indoor dining (no Bugs), and was met at the door and escorted inside. At his polite suggestion that we might enjoy the lovely weather on the roof, we checked it out and he was right. We stayed on the roof.

We ordered fried Calamari as the app and each of us had yellow snapper. Mine Papeyote and wife menierre. The papeyote (sp) was steamed in its own aluminum foil pouch with onions, peppers, and spices. Just opening up the foil and sniffing the burst of flavored steam was fantastic. But first the appetizer.

Calamari should be cooked for one minute, or 60. Otherwise it gets tough. This was perfect at the one minute deep fry. Crispy crunch on first bite with succulent sweet calamari inside. Dipping sauce was slightly spicy red chili sauce of some kind, and most flavorful and understated. No heat at all.

My wife's snapper was served with a butter, garlic, citrus sauce and had fresh crispy french fries as the side. There were perfectly al dente steamed vegetables, including cauliflower, brocolli, squash and fantastic buttered green snap peas. All fresh, sweet and perfect.

I ordered my fish with the garlic pasta as the side, and it was spectacular. Butter, salt and garlic on perfectly cooked spaghetti that was perfect with bites of steamed snapper and vegetables.

Finished off the meal with a slice of chocolate cake. This was as usual, being quite good without matching up to my wife's.

The service was friendly and attentive. My water glass was never empty, and my ice never melted. It's funny to read the other post and see the reactions of others who felt the restaurant made some mistake on the order. The waitress who wrote that up stated quite clearly in her post that the order was checked and confirmed twice with the customer before it went in to be cooked.
We had no worries at all. Just great food, great service and a fantastic location with no bugs up on the roof. We really never do this, but are going back again tomorrow for an instant replay.

Hope this one succeeds. It is truly worth experiencing.

Rich - we had the same wonderful experience at Unbelievable last March. Rooftop dining with a balmy Bonairean evening breeze and excellent food and service. We will be back in January and Unbelievables is on the "must dine" list.

Hello all:
We put our money where our mouths are and went back to Unbelievable today, making it two nights running. We never do that.
Had much the same experience as yesterday, but treated like royalty, as they all recognized us. We got the captain's table on the roof, which juts out a bit in front and has beautiful views.

This time, we decided to skip dessert to allow for another appetizer. We tried the Conch fritte and it is outstanding. I cannot tell what is in the sauce, but it is different from the calamari one; it is sweeter and fruitier. Crispy on the outside and soft and sweet inside. Best we've had anywhere.

Oh well, we are leaving the island for home soon, and will have to hold onto the memories. This restaurant is great, and the staff are laughing and smiling all the time, definitely happy to see patrons.

Hi Richard,
I concur that Unbelievable is wonderful! We arrived at the Divi on Sat., 12/5 and were pleased that it was just a short walk from the resort. Everyone LOVED their food and the wait staff and owners couldn't have been friendlier. I ordered the tenderloin and it was the best steak I had all week--it was very tender and was cooked just the way I ordered it. I also had the creme brulee for dessert and it was worth every calorie!
I'd go back again in a heartbeat! :-) Robyn

Ditto what everyone said. We went there on our first evening, Dec. 5th. Great service, lovely rooftop dining with a wonderful breeze. We had escargot that were awesome along with conch fritters for the table. Awesome! Wine was great and then we had the Snapper Meniere, with lemon, butter, and capers. yummy.. spilt a creme brulee. Not only was the food delicious, it was priced pretty well for Bonaire. So close to Divi, I would have no problem going twice in a week. We also did Sunset Beach, great atmosphere right on the ocean with yummy food, Lions Den for burgers before a night dive at Buddys, very good. The italian restaurant right out the back gate of Divi, always love this place!!!! If you wnat the best pizza you will ever have, go to Pasta Bon Pizza, Wow!!!!! I would love to own a franchise!!!!

Raymond, why get a franchise when you can own te original? Just buy it! Pasa Bon Pizza is for sale, see Sunbelt's ad.

Brenda, it's on the street that parallels the water, near Divi (as you can see from the other posts.) If you drive south through town along the waterfront and stay on the water side as far as you can go, there's a turn to the left before Divi and you're looking right at the restaurant.

It is a great place in our book too.

We just got back and must concur with the review..Unbelievable is just wonderful. The food and service are a delight. So much so that in one week we had dinner there twice.

NO BUGS..
Really worth going to more than once..
