What US dollars should I bring to Bonaire, so I will not get Antillean Florin as change back from restaurants? $10.00 and $1.00 and quarters? Or can you go to a bank with US dollars and get Naf money back?

You will have no problems getting US dollars exchanged into Naf, at a rate of 1.77 Naf to the dollar. If you use Dollars at restaurants, stores, you will generally receive a 1.75 exchange rate. Most everywhere will take dollars, but give you Naf in change (a couple of the "tourist shops" have given me dollars in change, but it's not widespread). Prices are generally listed in Naf.

the rate to exchange naf back to $ is 1.82 so you do not want to have to reconvert if possible. US coins are not acceptable at most buisnesses. your best bet is 1, 5, 10 and 20 dollar bills since many places will not take larger denominations.

Yes. Banks are open from 8am to 3:30pm weekdays. Rate is NAF 1.77 to the dollar at at bank (1.78 for traveler's cheques) plus a NAF 0.30 fee for the exchange transaction. You can also get NAF (or US$) from the ATM machines with a U.S. ATM card.
