We had fabulous food at the Garden Cafe.
Especially liked the Red Pepper spread. Have not had anything like it in Middle Eastern Restaurants before. Asked the waitress what was in it and she didn't know the spices. Any ideas?

Check out the red pepper hummus recipe at http://www.recipecottage.com/middle-eastern/hummus25.html

There are many more hummus recipes on the site. If you can't find tahini, look for plain hummus in the speciality foods section of a large supermarket and add the red bell peppers using a blender or food processor. If all else fails use a mixture of 25% light olive oil and 75% pure peanut butter (Laura Scudders is the easiest to find) to make the desired substitution amount for the tahini.

Nell,
I forgot, if you have a Trader Joe's in your area, they carry hummus. I'm lucky, Little Seoul is a mile to the south, Little Saigon is two miles to the south, Little Cairo is a mile to the north, and all kinds of other "Little" towns or stores are also nearby. Good luck finding the hummus or the ingredients. There are also online stores that you can get dried hummus mixes from also, do a search for "hummus". I looked at your profile and you didn't have a location for your home away from Bonaire, so I didn't know what would be available.

Isn't hummous mainly chickpeas? Those are pretty easy to find, at least the canned ones (goya I think)

Yes indeed, hummus is mostly chick peas with garlic, tahini, and some lemon juice. I have the recipe somewhere if needed....

My Mom is full Armenian. Here is our family recipe:

can chick peas drained
garlic
lemon juice (real)
salt
parsley

Blend well and serve with Syrian Bread and carrot slices.

The tahini (ground sesame seeds) is the hardest ingredient to find. Ann's recipe doesn't require it, but most hummus recipes do.

If I can add my two cents worth. The hummas I make has roasted the garlic. It adds a great flavour. No tahini in mine either.

1 can 19 oz. chickpeas drained and rinsed
juice from one lemon
4 tbsp. olive oil
salt to taste
2 heads roasted garlic (in foil 400F for 40 min.)
pinch of cayene pepper
1/4 cup water to blend smooth
Top with parsley

There must be something else in the Garden Cafe recipe. The spread was a deep red color.
I've made a few red pepper hummus recipes and while they are very tasty it is not the same spread.

Any ideas?

I think the Garden Cafe may just puree peeled roasted red peppers for theirs... Can't remember for sure, it's been a while since I had their red pepper spread. I do remember it was yummy, though!
