Any suggestions on for a first time dive to the 'Windjammer'? I'm hoping for a course but don't know if deep and wreck are/can be combined. Any suggestions?

The Windjammer is not a deep dive in the PADI advanced sense but a deep dive in the technical diving sense. I know that Benji (Caribbean Gas Training) and Walt (Rec Tec Scuba) offer courses and I think Toucan Diving does too. First you need to get certified for Tech Diving and then you need to go with a Tech Guide that has a special permit to make the dive (the people mentioned above can all get this permit as far as I know).

If you are not into Tech Diving then maybe the Hilma Hooker is a good alternative. If your question about the deep and wreck course being combined is related to PADI advanced course or specialty course then the answer is no...they can not be combined.

Plan for 200 ft; you can do the wreck with less depth but you won't see as much. Trimix, of course.

If I recall, you can touch the rail at about 165 FSW. I would probably do the dive at about 180 or so. 200 FSW is a good planning point...
