The bolani is made in a tandoori oven, it's a flat bread stuffed with spinach and the spread is garlic yogurt cheese with spices, I put some sundried tomato pesto on it too. I don't make it, I buy it, we live very close to little Kabul and I try and shop there once a week if I can. We eat a very diversified menu, I am not vegetarian but only eat meat once or twice a week. We have travelled so much around the world I have many favorite foods many would consider "exotic" or have never heard of before!

all this talk of good eats - I feel so neglected. All I had for lunch was a garlic bagel with smoked salmon, veggie cream cheese and capers. That didn't hold me over so I am now sucking the last of the filling out of jelly donuts. Probably better wash down the jelly with some Slimfast.

Bread is low carb , yogurt cheese is low fat and the tomato pesto isn't too bad, it's made with olive oil and not nearly as fattening as regular pesto. The tomatos give it a very different consistency than regular green pesto though. Just a little tid-bit FYI, little Kabul has the largest Afghani population outside of Afghanistan, and a very active community, it's a neat place.

Brad, it is very similar to Indian food, only not as spicy. My hubby is from India so many of my favorite foods are those from India. It was a stretch at first, I'm Italian so I had to get use to the smells and flavors. My husbands grandmother taught me how to cook a few things but they always end up tasting Italian! And of course i always wash it down with a JELLY DONUT!

Linda, I have a friend who's parents are missionaries in Kabul, I get pictures and updates from them frequently. She teaches the women a craft so they can make saleable items to earn a living.I had considered going for a 2 week stint to help her but my hubby said absolutely not, too scary a place still.

PS, how about a game where we have to use words like "plethora and concoction" in a sentence? I'll work on it for tomorrow.
