Salmon Filet with Mango Cilantro Salsa:

4 6-ounce portions salmon filet

Mango Cilantro Salsa:

1 ripe mango, peeled and ½-inch diced
¼ cup chopped scallion, green part only
¼ cup diced red bell pepper
1 tablespoon finely diced fresh jalapeno
1 tablespoon chopped fresh cilantro
1 small clove garlic, minced
1 tablespoon freshly squeezed lime juice
¼ teaspoon salt
½ teaspoon extra-virgin olive oil

Bake salmon filet at 400ºF for 15 to 20 minutes, depending on the thickness of the salmon. For Mango Cilantro Salsa, lightly toss all ingredients in bowl. Chill in refrigerator for at least 1 hour for flavors to meld. Serve salsa as an accompaniment to salmon. Mango Cilantro Salsa also goes nicely with grilled meat or chicken.

Serve a chilled white wine.

Wild caught salmon - right?

Okay here buddy, tired and sore long day/night yesterday but back on schedule at the side job - FINALLY!!!

We enjoyed our first powerful thunderstorm of the season last evening. It may sound crazy but I enjoy watching storms when they are over water.

Finished the planting...moved the H & C's to a new location (the dirt they were in was like concrete!) and filled the pots with annuals.
Hope they live till at least tomorrow when Steve's parents come to the shore.
Jerry your new job looks like alot of "fun".

afternoon gang.. well I did my first dive of the season today in 48 degree water and I was toasty!! i love my drysuit for this time of year.. I didn't see any fish but I did go and clean the cross {doesn't seem like 3 years already} I looked for a lobster or two but they must still be in their jammies all bundled up in a warm nest.. No big fish.. only moon snails and spider crabs.. a few teeny tiny flat fish and one very cold baby black fish.. wasn't the dive I usually do but I was alone and it is tide/current dependent.. I went and explored some of my haunts but there was a free diver with a BIG gun and I decided to stay away from him.. Everything worked fine and I actually had too much weight on.. yippeeee next time I will go lighter..

Very impressive Freddie! Hope there was someone nearby to be your above water buddy!
We tried diving here when we first got certified...very murky and COLD! But they say if you can dive the East coast or west for that matter....you are a pretty skilled diver!
I'm a WARM water person...

I don't know where to begin. My life has changed so dramatically since... "he" arrived. I haven't seen Bob since yesterday afternoon when he left me gagged, hog-tied and naked along I69. I don't have the time to lay the entire sad story out right now, I'm usng the nurses' workstation and she could come back at any moment.

Hi guys (that includes gals). :-)
Home early...what to do, what to do.

Jerry, read all your salmon recipes, sound good. I have to force feed Larry fish, though, but I do it at least once or twice a week. He prefers the breaded fish stick variety which I don't allow. :-) I'm having to teach the boy how to eat healthy and like it. :-)

It's hot enough to swim, may be a sunset in the pool night. I think I'm cooking italian tonight. There are jars of Ragu staring at me from my pantry. We'll see. (I know, I know, Jerry probably makes it from scratch but I let Ragu do that these days!)

Not quite 5, so maybe I'll start dinner. Saute some onions and peppers with a few garlic cloves, and see what it makes me want to cook.

And I want to call to order a meeting of the webcam people! Too many have abandoned ship, and things need to be discussed. :-(

Freddie, for some reason I can't find the 5 liters here, only a small box (don't know how much is in there), and it costs the same as the big boxes did in AL!
