Cheesy Chicken Wrap

1/4 lb boneless, skinless chicken breast trimmed of fat
1/4 cup onion slivers
1 low-carb whole wheat tortilla (7.5" diameter)
1 wedge (3/4oz) Laughing Cow Original Light Swiss Cheese
1 Tbsp low sodium ketchup
2 tsp sliced pickled hot chile peppers

Place chicken on cutting board and cut into very thing slivers. Can buy chicken tenders to make it quicker :-)
Preheat skillet over medium high heat and mist with olive oil spray. Place onion and chicken in pan. Cook 2 minutes or longer until evenly browned and no pink is visible. Set aside.

Place tortilla between 2 damp paper towels. Microwave on low for 10 second intervals until warmed. Transfer tortilla to plate and spread cheese evenly down center leaving 2" bare on one end. Top with reserved chicken mixture, ketchup and peppers. Fold tortilla and serve immediately.

I like these easy, tasty recipes that have been posted lately!! They all sound so good!!!:-)
This one I could make ahead, bring the things downtown, heat up in the microwave and have a great lunch!!:-)

I saw some recipes that looked interesting that I promise to share but I'm bogged down in year end/new accountant work.

Thanks for continuing this thread - it really does make me smile and keep the thought in the right direction (if not the mouth and hands!!!)

Boom, have missed you gal!!! I really miss your chipperness so don't be gone that long anymore LOL! OK?! :-)

I'll try to keep posting some food stuff/ideas. Don't have internet at home, thanks to Comcast idiots, so can't get on at night the last few nights! Have been hitting the Crown Royal in my down time....LOL! Nah, only teasing but no internet down is about to drive me to sipping :-)

Am about to steam some salmon in the microwave. Add two tbsps white wine to enough water to just cover the base of a microwaveable dish. Add a bay leaf and some mixed herbs. Put a thin slice of lime on each of two salmon steak and microwave for around five minutes. I will be serving with new potatoes and asparagus.

Kobi - I saw this recipe the other day and thought about all the great ones you post here, so here is my contribution (more of a dinner menu, but sounds good...I would recommend a light, white wine, nicely chilled):

Springtime Chicken (not to be confused with "Spring Chickens" which are totally unrelated)

Chicken:
1 8 oz container lowfat plain yogurt
3 Tbsp. balsamic vinegar
8 thin cut boneless, skinless chicken breast halves (about 1 1/2 lbs. total)

Tomato-Mozzarella Topping
1 Tbsp. extra-virgin olive oil
1 medium onion, cut into 16 wedges
1/4 cup balsamic vinegar
2 Tbps. water
1 pound plum tomatoes, cored, seeded & chopped (about 4 cups)
1 tsp. salt
1/2 tsp. black pepper
8 oz. fresh mozzarella cheese, cut into 1/2 inch cubes
1 cup loosely packed fresh basil leaves, chopped

Prepare chicken marinade by mixing the yogurt/balsamic vinegar in a large ziplock bag until well blended, then add chicken, coat thoroughly and marinate in fridge for 20 minutes.

In large skillet, heat oil over medium heat. Add onion and saute five minutes or until slightly softened and the wedges fall apart. Add balsamic vinegar and water, bring to simmer. Reduce heat to low simmer and cook until liquid is reduced and onions are tender. Increase heat to medium-high and add tomato, salt & pepper, cook for 2 minutes. Remove skillet from heat, let cool 2-3 minutes then stir in mozzarella and basil.

Remove chicken from bag, gently rinse and pat dry with paper towels. Grill (6-8 minutes per side). Then serve immediately with topping, or let cool to room temp. and serve.

Nutrition facts per serving:
224 cals.
24 g protein
6 g carbs
11 g fat (6 g saturated)
1 g fiber

Those recipes sound YUM. :-)

I have to add here, a potentially icky subject. lol I've been eating Yoplait + Active Digestion, and/or Dannon Activa as my snack (blackberry/pomegranite or blueberry, with tons of fiber in a CREAMY yogurt!). They um, do have a "self cleansing" effect that might help jumpstart a diet. Just, errr, if you work don't eat it till later in the morning, or you'll get the tummy rumbles around 3:00!

I'm home early, but when my BFF gets home at 5:30, we're going two times around the lake. And we make it fun, and try to twist our waists when walking and no one's watching - talked about taking hand weights today. We'll see! Oh, we found out it's 1.7 miles around, so that's a good deal.

I think people forget sometimes that the biggest contributor to losing weight and getting healthy is to get movin'! (And don't forget dancing is a GREAT way to MOVE IT! lol)

I'm so addicted to this site, that every hour or so I have to pop back in and see what you're all doing. How can I clean, work projects, exercise, etc, when I have to come back and see who sez what to whom?????

I am truly lurking everyday - just not posting when I lurk...... Am I a voyueer?

Hula hooping.....an excellent and fun form of exercise. Seriously. Not just for kids anymore. Effective, too...I speak from experience.

As you follow Gail's command to step away from the keyboard, grab your hula hoop and swing that baby around your waist for awhile.

Look good in your wetsuit......avoid the muffin top.....enable yourself to have an extra Bright or two....

I have a Hula Hoop - it's weighted too (4lbs) LOVE it!! I have the funniest video of Guy and his buddy trying to do it LOL!!

I can actually see the wood top of my desk :-) OMG!!!! what a great feeling!!!!
I really think I'll see the end of this by next week :-))))))) Of course, then some other new Project will start!
