Here is a snack idea.........

Lox-Of-Muscle Crisps

2 Tbsp fat free cream cheese
2 tsp chopped fresh dill
1/2 oz. smoked salmon, finely chopped
2 fat free RyKrisp crackers
1 tsp finely chopped red onion

In small bowl, combine cream cheese and dill. Mix well. Gently stir in salmon.

Spread half of the salmon mixture evenly over each cracker. Transfer to plate and sprinkle half onion over each cracker. Serve immediately!

13 g carb
1 g fat
6 mg chol
3 g fiber
507 mg sodium

Vegetarian Jambalaya - Beach Style

1 cup vegetable stock
1 ½ green bell peppers chopped
1 large onion chopped
4 stalks celery chopped
1 large tomato chopped
2 cups mixed vegetables cut into chunks. (mushrooms, snap peas, artichoke hearts,
red pepper, corn)
Pinch of Cayenne
Bay Leaf
1 tsp. Thyme
1 Tbl. blackening seasoning
2 Tbl. vegetarian "chicken" flavored seasoning
1 cup chicken-style wheat meat,cut into bite size pieces
1 cup vegetarian sausage, cut into bite size pieces
½ cup okra (optional)
8 cups cooked brown rice
1 cup tomato paste

1. In a medium pot over low heat, add stock, peppers, onion, celery, tomato and mixed fresh seasonal vegetables except okra. Simmer, stirring occasionally, until vegetables are tender, about 10 minutes. Add seasonings (thyme, cayenne, "chicken flavored" powdered seasoning, bay leaf, blackening spice) meat alternatives , and okra; cook 5 more minutes. Stir in rice and tomato paste; continue stirring until mixture is thoroughly blended.


2. Serve hot garnished with carrot and scallions and crusty French bread or cornbread.......
DANG, realized that you forgot to add shrimp or andouille sausage to your sister's vegetarian recipe, throw resulting jambalayuck onto beach - GO GET ICE CREAM!!!

Kobi, that sounds great!! To be honest, most of your regular meal recipes don't do much for a meat and potatoes guy.........but the finger food sounds excellent!! I love trying out new stuff!!

Tom, I LOVE jambalaya, and your recipe sounds delicious!! I'm going to try it this weekend as well!! Can I add shrimp too?

Ginger-Soy London BroilPrep: Cook.

Ingredients
1 piece (2 inches) Fresh Ginger, peeled and thinly sliced
1/2 Red Onion, cut into 1-inch chunks
4 cloves Garlic coarsely chopped
1/2 cup chopped fresh Cilantro or Flat-Leaf Parsley
1/4 cup dry Red Wine
1/4 cup Soy Sauce
1/4 cup Vegetable Oil
1/2 teaspoon Black Pepper
1 Beefsteak (1 1/4 to 1 1/2 inches thick; 1 1/2 to 2 pounds) cut from the top or bottom round or 1 Flank Steak (1 1/2 to 2 pounds)
Cooking Instructions
Prepare the marinade: Place the ginger, onion, garlic and cilantro in a food processor and process until a smooth paste forms. Add the wine, soy sauce, oil, and pepper and process to combine.

Place the steak in a baking dish just large enough to hold it and spread the marinade over it. Let marinate in the refrigerator, covered, for at least 4 hours, ideally 6 hours, or even overnight (12 hours) if time permits, turning the steak a few times.

Set up the grill for direct grilling and preheat to high. When ready to cook, brush and oil the grill grate. Remove the steak from the marinade and drain well. Place the steak on the hot grate and grill until cooked to taste, 6 to 8 minutes per side for medium-rare, 2 minutes more per side for medium, rotating the steak 90 degrees after three minutes if a crosshatch of grill marks is desired. (This is not absolutely essential, as the steak will be carved for serving, but the perfectionist in you may want to do it anyway.)

Transfer the steak to a cutting board and let rest for 5 minutes. Using a sharp knife, carve it into broad thin slices, hold the knife blade at a 45 degree angle to the top of the meat. Serve at once.

Tad,

1. I don't need to tell anyone how good of a cook I am. Hell, even I don't believe me.
2. I don't need a woman to clean my house, did it for years by myself, still prefer to do parts of the house myself. (not a slam of my lady either)
3. Most importantly, as I was finishing Sunday's repast of: Stuffed Pork Tenderloin served on a bed of caramelized onions, with grilled asparagus which had been marinating for a short time in smoked paprika and olive oil and garlic potatoes, my lady used a steel to sharpen my favorite carving knife. I could shave with that thing. She sometimes lurks here so...... get my point:-)

Jerry, that is making my mouth water. If I move to Massachusetts, will you marry me and vacuum my house?

I like shiny light pink lipstick, myself. Hint, hint Tom. Pink is much easier than red to get rid off, face and all.

Anyone got any old HOT pink fins in mint condition for sale? Larry tells me mine are cracking. I refuse to believe it, but when I do that, I end up paying $1200 for my van's AC. He wanted me to tune up, I was like, "You are ALWAYS wanting me to tune up my van, it can wait." It...couldn't.

I think I'm going to try my old blades another year, unless I find something I like. They have this new pink, which is a wimpy pink, and I like hot pink.

Oh, this is the weight watcher's thread! I'm still doing good. Pretty darn good.

Was sore muscled and sleepy yesterday (because I worked out too much, walked too much, and danced my A off and couldn't fall into the new time over a weekend), I had to leave early yesterday, ready to fall asleep, didn't get to, but I went to bed at 8:00. I'm doing my part. Trust me. I was bright eyed and bushy tailed today, vs red eyed and bushy haired. :-)

:-) Getting into the end of the groceries, so it's seafood week. Larry doesn't like it. I do.

Well, it turned out to be a glorious day as I spent the day shopping, getting my nails done and eating bon bons as all us women with issues do.

Tom, I use a lipstick called Sexy MotherPucker (yes, with a letter "P") it plumps the lips and adds color but you might want to wait a few minutes before engaging in..ah never mind just wait a few minutes after you put it on to let it do it's majic! It comes in many colors but I use plum juice and I think it may work for your skin coloring too.
Jerry, your butt doesn't look big in the red dress just next time try it without the fishnets.
