OK here's my daylight savings food idea for today.....

Chicken Lettuce Wraps

1 can (8 oz.)bamboo shoots, drained and minced
1 can (8 oz.)water chestnuts, drained and minced
3 Tbsp sherry
2 Tbsp hoisin sauce
1 Tbsp reduced fat peanut butter
2 tsp reduced sodium soy sauce
2 tsp hot pepper sauce
2 packets sugar substitute (such as Splenda)
1 Tbsp minced garlic
1 cup finely chopped onion
1/2 lb. ground chicken breast
2 tsp finely chopped fresh ginger
1/4 tsp salt
1 tsp toasted sesame oil
8 small leaves butter lettuce
1 scallion, chopped
1 small cucumber, seeded and sliced into 1" strips

In medium bowl, combine bamboo shoots, water chestnuts, sherry, hoisin sauce, peanut butter, soy sauce, hot pepper sauce and sugar substitute. Mix well and set aside.

Mist large, nonstick skillet with olive oil spray and set over medium heat. Add garlic and cook 2 minutes, or until fragrant. Add onion. Cook, stirring occasionally, 3-4 minutes or until tender and starting to brown.

Increase to medium heat and add chicken, ginger and salt. Cook, breaking chicken into small pieces 3-4 minutes or until no longer pink. Add bamboo shoot mixture. Cooke for 2 minutes, or until hot. Stir in sesame oil.

Remove pan from heat. Spoon chicken mixture, evenly divided, into lettuce leaves. Top with scallion and cucumber. Serve immediately.

I think I will try this one!!! Sounds easy and yummy!!!

I like that one Kobi. I'll have to try it. High protein and low fat - that's EXCELLENT!

Bathing suit season indeed, Christine B!

I danced and worked out so much this weekend I feel like a truck hit me.

:-)

Still doin' the healthy cereal for breakfast with a few fresh blueberries thrown on top, soup or sandwich and pickles for lunch (and doritos, a tiny pack), blueberry yogurt if I need it for a snack. And then there's supper.....

Tonight, maybe chicken wings in Mojo sauce, baby red potatoes with heart smart butter and cracked pepper, steamed asparagus......and I want some BREAD AND BUTTER, but will try to resist. :-)

OH, and the pool people came and vacuumed out the pool, so it's crystal clear again. Ready to get in it soon. So bathing suit time arrives early, here. (which is why I'm working out so hard and being so darn strict about my food.)

Kathy, You're a good inspiration :-) Keep it up, girl.

I have 60 days till BON so this fat arse must do something. Treadmill here shortly; it's 55 so girls can run wild in the yard while I workout.
