Jerry, I would like to start having fish once a week but really don't like fish :-( Such a dilemma.
Your salmon recipe sounded good but how do I pick good salmon???
Do you have a good starter recipe for fish?

Not much actually, scallops are pretty much it, calamari in steaks NO tentacles!!! I stay away from shellfish due to cholesterol (Guy's is scary High). That's why I'm thinking of trying to introduce salmon or some other Omega 3 rich fish into our diet.

Me too. I've never been crazy about fish, but now need to start having it at least once a week. I really only like the white flakey kind, but that isn't supposed to be the heart healthy stuff..... I do like crab, lobster, and shrimp, but the butter kills the health aspect.

It's funny because I Love to cook and read cookbooks. I find I'm attracted to a lot of recipes for fish due to the blend of flavors and lightness of sauces but I use chicken instead :-)

Growing up in the Keys as a boy we ate fish and lobster every meal... believe it or not I still love them both!

OK, serve as a tapas.
splash of olive oil or veg oil.
6 big scallops.
2 wedges from a pink grapefruit.
1 ts of fresh chives shopped.
2 tbs of grapefruit juice.
2 tbs of sparkling wine.
dash of pepper
dash of salt.
1 heaping tbs of diced red pepper (small)
pinch of smoked paprika.

Clean two wedges of grapefruit, set aside.
Squeeze out two tbs of grapefruit juice from what's left. Add the wine, chopped peppers, mix together, then set aside and put in fridge till needed.

Heat a heavy fry pan over med-hi heat, add enough oil to coat the bottom of the pan. Dry out the scallops, season with salt and pepper on top and bottom only. Add to pan (around the edge, not in the center) when oil starts to smoke. Allow the scallops to caramelize to a dark golden brown. about 3-4 min's. Turn the heat to med and fry the other sides. NOTE: Do not try to turn if stuck, just allow a min more, it will come loose on it's own once caramelized. DO NOT OVER COOK.

Place the scallops in the center of a large white plate, spoon in half the sauce from the fridge to the bottom of the plate. Add one grapefruit wedge next to the scallops, garnish with a pinch of chives. Add a pinch (small pinch) of the smoked paprika to the top of each scallop.

Serve the rest of the wine, ENJOY!

Once upon a time, a young lad was born without a belly button. In its place was a golden screw. All the doctors consulted told his mother that there was nothing they could do. Like it or not, he was stuck with it.

All the years of growing up was real tough on him, as all who saw the screw made fun of him. He became a loner with very few friends.

One night a mysterious stranger appeared to him in a dream and told him of a swami in Tibet that could get rid of the screw for him. He was thrilled and desperate to try anything. The next day he took all of his life's savings and bought a ticket to Nepal.

After several days of climbing up steep cliffs, he came upon a giant monastery. The swami knew exactly why he had come. He was told to sleep in
the highest tower of the monastery and the following day when he awoke, the screw would have been removed.

The man immediately went to the room and fell asleep. During the night while he slept, a purple fog floated in an open window, bearing in its
mist, a golden screwdriver. In just moments, the screw-driver removed the screw and disappeared out the window.

The next morning when he awoke, he saw the golden screw laying on the pillow next to him. Reaching down, he felt his navel, and there was no screw there!

Jubilant, he leaped out of bed, and his butt fell off.

The moral to this is "don't screw around with things you don't understand -- you could lose your a$$".

I'd like to try the recipe you posted on the diet thread but I guess my question is...
how do I choose a good piece of salmon?
What do you all look for - wild or farmed?? I know that we have a farmer's market at the harbor every Saturday and I think they have fresh salmon there but would be intimidated at a whole or large salmon!

Tara FYI - You want wild Alaska Salmon

Salmon caught in Alaska (chinook/king, chum, coho, pink, sockeye) are among the better-managed fish stocks in the U.S. They are also low in contaminants.

Most Alaskan salmon populations are healthy, and fish are caught with gear that does little damage to the environment.

I am OK thanks Jerry but I have been working really hard with a family who were involved in a near fatal road accident. They are a Moslem family and I have been working with their only son who is also the youngest child so there have been a lot of issues. They nearly lost him so I have had to work on getting him out of the hospital. MY HEAD HURTS. I did manage to take him to school for his last class photo of his primary school, RESULT!!
