Pappardelle with Zucchini Ribbons.

12 oz. pappardelle pasta
3 zucchini, apx 11/2 lbs.
apx 10 oz grilled chicken breast. Tear off small chunks, like pulled pork.
1 cup crumbled feta cheese
1 sm red onion, halved, thinly sliced. 3/4 cup.
1/2 cup roasted red pepper, diced.
1/2 cup chopped fresh mint.
1/4 cup olive oil
3 Tbs. drained capers.
1 tsp. salt.


Cook pasta according package directions.
Using a vegetable peeler, on opposite sides of zucchini, cut lengthwise to make thin ribbons. Dice any remaining zucchini.

Drain pasta. In a large bowl, toss pasta and zucchini, Add chicken, feta, onion, peppers, mint, oil, capers and salt; toss well.

I also like it with a few cloves of garlic. In a sm pan, add 1/4 cup of olive oil, heat over low flame. Dice two med cloves of garlic, add when oil is hot, simmer until garlic turns a SLIGHT golden color (sweating the garlic). Remove from heat. Set aside until cool. (room temp) Use when ready.


Serve with warm white merlot.

Tom, try this.
Get a big, fata$$ tomato. Stick it in the freezer for a few min's. Do not allow to freeze, just very cold. Slice big fat slices 1/2". Grade some Parmigiano Reggiano, salt and pepper the tomato, cover the top with the parm. Here is the fun part.
Get out your plumbers torch, blast it for a few sec's. Drizzle some EV olive oil and a aged BV on top. Garnish with some fresh mint.

Add a tsp of mayo with a pinch of smoked paprika on the side.

Can I steal it too Jerry? lol! Do you have anything interesting I can take to the thursday night beach bbq this week? OH, Jerry, and it's EVOO buddy...at least according to my fav tv cook tee hee

Just got back from the Orthopedist...bone scan results...fracture in L5...FRESH...go figure. The only thing I can think of is when I went out on my sea doo after July Fourth, and ripped it up on the water...anyway, I am on total REST...I kept asking him "can i..." he's like "NO, YOU HAVE A FRACTURE IN YOU SPINE" Now I get to go have an MRI to see if there are fragments...blah blah blah...NO DIVING...I am pissed off!

Thank you for the rant...now back to Jerry's Daily Menu Recipes (only 9 today) lol!

OK, going to a beach BBQ. Get a large platter, a large chunk of foil to cover the platter. On the way to the BBQ, stop at KFC, order a large bucket of chicken. Empty the bucket on to the platter, cover with the foil. Make sure to dispose the bucket there. Start car and go.
